Marmalade Cake - Set Recipe
125g softened Butter, 110g Caster Sugar, 2 large eggs, 250g SR Flour, 60ml milk, 3 heaped tablespoons Marmalade.
2 tablespoons marmalade & 2 tablespoons water for the glaze.
Put all ingredients into a bowl/food processor and mix until just combined, do not overmix. Put mixture into a lined 2lb loaf tin
and bake at 160 degrees C for 45 minutes, or until skewer come out clean. Remove from oven and prick all over with a skewer.
Heat 2 tablespoons of marmalade with 2 tablespoons of water and pour all over top of cake
